WIDE ARRAY OF RECIPES FROM CHILI CON QUESO TO CHOCOLATE CHIP COOKIES INCLUDED IN DISTRICT CLERK COOKBOOK NOW AVAILABLE
Just in time for holiday festivities, the District Clerk’s cookbook is available. Full of dozens of recipes for everything from chili and cheesecake to crab cakes and cookies, the cookbook will provide lots of new recipes for the parties and family gatherings ahead or make excellent gifts at just five dollars each.
Brittny Owens produced the cookbook, collecting individual recipes from District Clerk deputies department-wide, then formatting them, assembling the pages and binding the books. This special project, which is expected to generate a significant amount of money for the Benevolence Fund, would have been impossible without Brittny’s months of effort and her many skills.
“We encouraged participants to choose easy and inexpensive recipes because we know that every one is budget-conscious now, but we also wanted the cookbook to show that “delicious” doesn’t have to be “expensive,” says Brittny.
The tasty recipe below for a delicious enchilada casserole is just one example of the crowd-pleasing, cook-friendly recipes found in this book. But along with all-time main-stream favorites like Mississippi Mud Cake, cooks will find some unusual contributions like Maria Sanchez’s Puerto Rican sweet rice pudding handed down through her family as a traditional holiday delicacy.
ENCHILADA CASSEROLE
1 pack 6” tortillas (flour or corn)
2 can chili (bean or no bean)
1 lb hamburger meat
1 small onion
1 large pack shredded cheese (your choice)
1 cup lettuce
1 cup chopped tomatoes
1 tub sour cream
1 small jar picante sauce
Pre - heat oven to 350
Grease an 8x13 baking pan
Layer tortilla shell on bottom
1st layer
Layer 1/2 of hamburger
1/2 chopped onions
1 can of chilies
1/2 of the cheese
Top with another layer of tortilla
2nd layer
Same as first
Bake for 35-40 minutes or until cheese is melted
Take out of oven
Top with lettuce and tomatoes
Picante sauce
Sour cream
Enjoy-----prep time about 10 minutes cook time 24-40 minutes
